Ingredients

For the peaches:

  • 5–6 peaches, peeled and sliced (or 2 large cans of sliced peaches, drained)
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla

For the batter:

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup (1 stick) butter, melted

For serving

  • Vanilla ice cream
  • Extra cinnamon sugar for sprinkling

Step-by-step instructions

  1. Prep the pan
    Preheat your oven to 350°F. Lightly grease a 9×13 baking dish or cast iron skillet.
  2. Prep the peaches
    In a mixing bowl, combine sliced peaches, brown sugar, cinnamon, lemon juice, and vanilla. Stir gently until the peaches are coated and juicy.

  3. Make the batter
    In a second bowl, whisk together flour, sugar, baking powder, and salt. Stir in the milk and melted butter until just combined. The batter will be pourable.
  4. Assemble the cobbler
    Spread the peaches evenly into the prepared pan. Pour the batter over the top and gently spread it so it mostly covers the fruit. It doesn’t have to be perfect.
  5. Bake
    Bake for 35–40 minutes, or until the top is golden and the peach juices are bubbling up around the edges. If you like extra color, you can sprinkle a little cinnamon sugar over the top for the last 5 minutes.
  6. Serve
    Let the cobbler cool for about 10 minutes, then scoop into bowls and serve warm with vanilla ice cream.
